About Bahia at the Table: Senac Sustainable Hospitality Restaurant-Schools

VISIT WEBSITE

Senac Bahia’s restaurant-schools make sustainable hospitality something students practise during live service. Based in Salvador, the Bahia at the Table initiative combines professional training with local food traditions, responsible sourcing and efforts to manage emissions and waste. Students learn in working restaurants, linking classroom knowledge with purchasing, menu design and guest service.

The submission reports a 26.7% reduction in emissions per person against its 2021 baseline, while recognising that growing activity also affects absolute emissions. Partnerships connect the schools with family farmers, recycling organisations and other local institutions. Scholarships help broaden access to hospitality careers.

Nominated for Education & Skills, the initiative celebrates the connection between learning, cultural identity and operational practice. Bahian cuisine provides the setting for lessons about resources and livelihoods, while the restaurant-school model allows future professionals to see how their everyday decisions can influence the environmental and social contribution of the businesses they may eventually lead.
